This tortilla pizza from @kenjilopezalt at Serious Eats holds a special place in my heart, not only because it is super tasty and dead simple to make, but because it was something I cooked for @kenjisalk on our first date.

With me having to be on a low FODMAP diet I needed to tweak the ingredients, but it’s still as great as ever!

Flour Tortilla Pizza (Low FODMAP style)

Ingredients

    • Olive oil
    • Gluten-free flour tortilla
    • Low fodmap marinara sauce from @fodyfoods
    • Vegan mozzarella cheese from @miyokoscreamery
    • Fresh basil

Instructions

Slice mozzarella cheese.

Turn your broiler on high and adjust the oven rack to 6 to 8 inches below the broiler. Heat olive oil in a cast iron pan over high heat until it shimmers. Reduce heat to medium-low and wipe out excess oil with a paper towel.

Place tortilla in pan and light cover with marinara sauce. Add mozzarella cheese and fresh basil on top and toast until the tortilla is brown around the edges. Remove from the heat and place under the broiler until the cheese is melted and toasty.
